In a mixing bowl, combine cooked sausage, ricotta cheese, 1/2 cup mozzarella, Parmesan cheese, egg, and Italian seasoning. Season with salt and pepper.
Spread a thin layer of marinara sauce at the bottom of a baking dish.
Spread about 2 tablespoons of the cheese and sausage mixture evenly over each lasagna noodle. Roll up tightly and place seam side down in the baking dish.
Pour the remaining marinara sauce over the roll-ups. Sprinkle with the remaining mozzarella cheese.
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes, or until cheese is melted and bubbly.
Garnish with fresh parsley before serving.
