Lemon donuts are a delightful treat with a tangy and zesty flavor that’s perfect for breakfast or dessert. Here’s a recipe for homemade lemon donuts:

Ingredients:

For the Donuts:

2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 cup buttermilk
1/4 cup fresh lemon juice
Zest of 2 lemons
1/4 cup unsalted butter, melted
1/4 cup vegetable oil
1 teaspoon vanilla extract
For the Lemon Glaze:

1 1/2 cups powdered sugar
2-3 tablespoons fresh lemon juice
Zest of 1 lemon
1-2 tablespoons milk (if needed)
Instructions:

For the Donuts:

Preheat your oven to 350°F (175°C). Grease a donut pan (or two) with non-stick cooking spray.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the eggs, buttermilk, lemon juice, lemon zest, melted butter, vegetable oil, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.
Spoon the batter into a piping bag or a resealable plastic bag with one corner cut off. Pipe the batter into the greased donut pan, filling each cavity about two-thirds full.
Bake in the preheated oven for about 10-12 minutes, or until the donuts spring back when touched and are lightly golden on the edges.
Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
