FRIED POTATOES AND ONIONS

4 red potatoes

3 tablespoons olive oil, divided

1 onion, chopped

1 green bell pepper, seeded and chopped

1 teaspoon salt

¾ teaspoon paprika

¼ teaspoon ground black pepper

¼ cup chopped fresh parsley

Directions
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and cut into 1/2-inch cubes.
