Ingredients (Yields about 3 cups):

6-7 medium apples, peeled, cored, and chopped
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon each of ground cloves, nutmeg, and allspice
Pinch of salt
1 tablespoon lemon juice
1 teaspoon vanilla extract
Instructions:
Cook the Apples:

In a large pot, combine apples, both sugars, cinnamon, cloves, nutmeg, allspice, and salt.

Cook over medium heat, stirring occasionally, until apples are soft and sugars dissolve.

Simmer and Blend:

Reduce heat to low and simmer for 20-25 minutes until thickened.
