Ingredients:
16 large Medjool dates, pitted
8 slices of bacon, cut in half crosswise
1/4 cup crumbled goat cheese (optional)
Toothpicks, for securing the bacon
Instructions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
If the dates still have pits, carefully slice them open lengthwise and remove the pits. Be careful not to cut all the way through the dates.
If using, stuff each date with a small amount of crumbled goat cheese. This step is optional but adds an extra layer of flavor to the bacon-wrapped dates.
Take a piece of bacon and wrap it around a stuffed date, securing it with a toothpick. Repeat with the remaining dates and bacon slices.
Place the bacon-wrapped dates on the prepared baking sheet, spacing them apart to ensure even cooking.
