BBQ Ribs

1. Remove the membrane from the back of the ribs with a paper towel for better seasoning adherence.
2. In a bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper to create the dry rub.
3. Apply the rub evenly over the ribs, massaging it into the meat.
4. In a spray bottle, mix apple cider vinegar and water. This will be used to moisten the ribs while cooking.
5. Preheat your smoker to 225Β°F (107Β°C). Place the ribs in the smoker, meat side up, and cook for 3 hours, spraying with the vinegar mixture every hour.
6. After 3 hours, remove the ribs from the smoker. Increase the smoker temperature to 250Β°F (121Β°C).
7. Wrap the ribs in aluminum foil with honey and a splash of apple cider vinegar. Return them to the smoker for 2 more hours.
8. Unwrap the ribs, apply a generous layer of BBQ sauce, and smoke for an additional hour, or until the sauce is sticky and caramelized.
9. Let the ribs rest for 10 minutes before slicing and serving.
