Ingredients for Berry Chantilly Cake
Cake:
8 eggs

1 1/2 cups sugar
1 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
2 tsp cornstarch
Cream:
2 (8 oz) packages cream cheese, softened
1 (8 oz) package mascarpone cheese
3 cups powdered sugar
3/4 tsp almond extract
1 1/4 tsp vanilla extract
2 cups heavy cream
Syrup:
2 cups water
3/4 cup sugar
Berries:
1 1/2 cups chopped strawberries
1 cup blueberries
1 cup raspberries
1 cup blackberries
Step-by-Step Instructions

1. Prepare the Cake Layers:
Preheat your oven to 350°F (175°C) and line two 10-inch round cake pans with parchment paper, then spray with non-stick spray.
In the bowl of a stand mixer, beat the eggs until foamy, then gradually add the sugar while continuing to beat on high speed.
Once the mixture is fluffy, beat in the vanilla extract.
Sift together the flour, baking powder, and cornstarch, then gently fold into the egg mixture until just combined.
Divide the batter evenly between the prepared cake pans and bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
