Cheesy Ground Beef and Potato Casserole

Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 3-4 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese (more if you like it extra cheesy)
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Green onions or parsley for garnish

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  1. Cook the Beef:
  • In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain any excess fat.
  1. Season the Beef:
  • Add garlic powder, paprika, salt, and pepper to the beef mixture. Stir to combine.
  1. Prepare the Casserole:
  • In a large mixing bowl, combine the diced potatoes, diced tomatoes, and cream of mushroom soup. Mix well.
  • Add the cooked beef and onion mixture to the bowl and stir to combine.
  1. Assemble the Casserole:
  • Transfer the mixture to a greased 9×13 inch baking dish.
  • Cover the casserole with foil and bake in the preheated oven for about 40-45 minutes, or until the potatoes are tender.
  1. Add the Cheese:
  • Remove the foil and sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.
  • Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  1. Garnish and Serve:
  • Garnish with chopped green onions or parsley before serving.
