Ingredients:
1 lb (450g) ground chicken
1 head of iceberg or butter lettuce, leaves separated
1 large carrot, grated
1 small onion, finely chopped
1 cup mushrooms, finely chopped
1 bell pepper, finely diced
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp hoisin sauce
1 tsp ginger, grated
1/4 cup roasted peanuts, chopped (optional)
Fresh herbs (like cilantro or mint), for garnish
Sriracha or chili sauce, to taste (optional)
1 tbsp olive oil, for cooking
Instructions:
Heat olive oil in a large skillet over medium heat. Add onion, garlic, and ginger, sautéing until fragrant.
Add ground chicken to the skillet, breaking it apart with a spoon, and cook until browned.
Stir in mushrooms, bell pepper, and carrot, cooking until vegetables are tender.
Mix in soy sauce and hoisin sauce, cooking for an additional 2-3 minutes. Adjust seasoning to taste.
Spoon the chicken mixture into lettuce leaves. Garnish with peanuts and fresh herbs. Serve with Sriracha or chili sauce if desired.
