Citrus Burst Blueberry Loaf

Beat in the eggs one at a time, then stir in the vanilla extract.

Mix in half of the flour mixture, then the milk and lemon juice, and finish with the remaining flour mixture, mixing just until incorporated.

Fold in the blueberries gently to prevent them from bursting.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
