Coastal Seafood Soup

Salt and pepper to taste

Directions:
Heat olive oil in a large pot over medium heat.

Add the onion, carrots, celery, and garlic and sauté until the vegetables are tender.

Pour in the white wine and let it simmer until reduced by half.

Add the seafood stock and diced tomatoes and bring to a boil.

Reduce the heat and simmer for 20 minutes.

Add the mixed seafood and cook for an additional 10 minutes or until seafood is cooked through.

Stir in the chopped parsley and season with salt and pepper to taste.

Serve hot.
