Ingredients:

2 cups cooked rice (white or brown)
2 cups fresh broccoli florets, steamed
1 cup shredded sharp cheddar cheese
1/2 cup cream cheese, softened
1/2 cup sour cream
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons butter
1/2 teaspoon each of salt and pepper
1/4 teaspoon paprika
1/2 cup additional shredded cheddar cheese for topping
Instructions
Preheat the Oven: Start by preheating your oven to 375°F (190°C). Grease a 9×9 inch baking dish and set aside.
Prepare the Base: In a large skillet, melt butter over medium heat. Add chopped onions and minced garlic, sautéing until the onions are translucent.
Combine Ingredients: In a large mixing bowl, combine cooked rice, steamed broccoli, shredded cheddar cheese, cream cheese, sour cream, and milk. Stir in the sautéed onion and garlic. Season with salt, pepper, and paprika.
Assemble the Casserole: Transfer the rice and broccoli mixture into the prepared baking dish. Smooth the top with a spatula and sprinkle the additional half-cup of cheddar cheese evenly over the top.
Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
Rest and Serve: Remove the casserole from the oven and let it sit for 5 minutes before serving. This allows the flavors to meld together beautifully.
