Creamy Tortellini Soup with Sausage, Spinach, and Parmesan Rich and Comforting Tortellini Soup with Sausage and Spinach

Ingredients:

1 lb Italian-style chicken sausage, casings removed
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon dried Italian seasoning
4 cups chicken broth (low sodium)
1 (14 oz) can diced tomatoes
1 (9 oz) package fresh cheese tortellini
4 cups fresh spinach, roughly chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Directions:

Heat olive oil in a large pot over medium heat. Add the chicken sausage and cook, breaking it into small pieces, until browned and cooked through, about 5-7 minutes.
Add the chopped onion and sauté for 3-4 minutes until soft. Stir in the minced garlic and Italian seasoning, cooking for an additional 1-2 minutes until fragrant.
Pour in the chicken broth and diced tomatoes (with their juice), and bring the mixture to a simmer.
Add the tortellini and cook according to package instructions (usually 7-10 minutes) until they are tender.
Stir in the chopped spinach and cook for 1-2 minutes until wilted.
Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Let the soup gently simmer for 2-3 minutes, allowing the flavors to meld.
Season with salt and pepper to taste. Serve hot, garnished with extra Parmesan if desired.
