Delicious Christmas Plum Cake Recipe

Ingredients:
For the Soaking Mix:
– 600g (4 cups) Dried Fruits and Nuts (Dates, Dried Apricots, Sultanas, Raisins, Dried Cranberries, Candied peel pieces, Red glazed cherries, Cashew nuts, dried papaya pineapple bits)
– About 2 tablespoons of Spices (Cinnamon, Allspice, cardamom powder)
– 3 tablespoons Brandy or Rum
– 3 tablespoons Golden syrup
– 2 teaspoons Vanilla extract
– 1 teaspoon Rose essence (optional)
– 1 teaspoon Lemon essence (optional)
For the Cake:
– 30g (4 tablespoons) Plain Flour
– 90g (½ cup) Semolina
– 100g (½ cup) Sugar
– 110g (½ cup) Butter
– 3 Egg Yolks
– 2 Egg Whites
