Ingredients:
4 large eggs
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup vegetable oil
1/4 cup milk
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
Pinch of salt
Gel food coloring (blue, purple, pink)
Powdered sugar, for dusting
Instructions:
Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper, leaving some overhang on the sides for easy removal later.
In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale in color. Add the vanilla extract, vegetable oil, and milk, and mix until well combined.
In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until smooth and fully incorporated.
Divide the batter evenly into separate bowls, depending on how many colors you’d like to use for your galaxy design. Add a few drops of gel food coloring to each bowl and gently fold until the colors are well distributed and you achieve your desired shades of blue, purple, and pink.
Pour each colored batter into a separate piping bag or zip-top bag with the corner snipped off. Pipe random swirls and patterns onto the prepared jelly roll pan, alternating between colors to create a galaxy effect.
Once the pan is filled with the colorful batter, gently tap it on the counter to remove any air bubbles and smooth out the surface.
Bake in the preheated oven for 10-12 minutes, or until the cake is set and springs back when lightly touched.
While the cake is still warm, carefully lift it out of the pan using the parchment paper overhang and transfer it to a clean surface. Starting from one of the short ends, gently roll the cake up along with the parchment paper. Allow it to cool completely while rolled up.
