Ingredients:
6 ounces (170g) semi-sweet chocolate, chopped
2 tablespoons unsalted butter
3 large eggs, separated
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
Pinch of salt
1 cup heavy cream
Optional garnish: whipped cream and chocolate shavings
Instructions:
Begin by melting the semi-sweet chocolate and butter together. You can do this using a microwave in 30-second increments or with a double boiler. Stir until the mixture is smooth, then set it aside to cool slightly.
In a separate bowl, whisk together the egg yolks, 2 tablespoons of granulated sugar, pure vanilla extract, and a pinch of salt until the mixture becomes pale and slightly thick.
Slowly pour the melted chocolate mixture into the egg yolk mixture, stirring constantly to combine. Set this chocolate base aside.
In a clean, dry bowl, whip the egg whites until soft peaks form. Gradually add the remaining 2 tablespoons of granulated sugar while continuing to whip, until stiff peaks form.
