Heavenly Raspberry Cheesecake Bars
Ingredients:
For the Crust:
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1/2 cup unsalted butter, chilled and cubed
1/4 teaspoon salt
For the Raspberry Layer:
2 cups fresh raspberries
1/4 cup white sugar
1 tablespoon cornstarch
For the Cheesecake Layer:
2 (8-ounce) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
For the Garnish:
1/4 cup sliced almonds, toasted
Fresh mint leaves
Directions:
Preheat the oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper.
For the crust, mix flour, oats, brown sugar, and salt in a bowl. Cut in the butter until crumbly. Press the mixture into the prepared dish.
