Homemade knots: extra soft and fluffy

INGREDIENTS:
200 ml (1 cup) lukewarm milk
100 ml (1/2 cup) lukewarm water
20 g (3 tbsp) sugar
7g dry yeast
70 ml (1/4 cup) vegetable oil
1 egg white
540 g (4 1/2 cups) all-purpose flour
6g (1 tsp) salt
60g (1/4 cup) butter + for brushing
150g feta cheese
50g cottage cheese
Egg yolk + milk
Sesame seeds

PROCESS

  1. In a bowl add the milk, water, sugar, yeast, vegetable oil and egg white and mix. Add flour, salt and continue mixing.
  2. When the dough begins to form, knead it with your hands. Add the butter and continue to knead to obtain a smooth and elastic dough. Cover with cling film and let rise for 2 hours, or until doubled in size.
  3. Mix the feta cheese and curd to prepare them for the filling of the buns.
