Perfect Christmas treats.
Christmas trees never tasted better!
From Easy Cooking
INGREDIENTS :
– 1 cup creamy peanut butter
– ¼ cup of unsalted butter, melted
– 2 Tablespoons of brown sugar
– 2 teaspoon of vanilla extract
– ¼ teaspoon salt
– 2 cups powdered sugar
– 10 to 12 oz. of chocolate chips, (You can also use chocolate chopped in small pieces if desired, but I use half of semi-sweet and half of milk chocolate )
DIRECTIONS :
1. First, line 8 x 8 inch dish with parchment paper, leaving the paper overhang the sides so you can easily lift it later and set aside.
2. Stir together peanut butter, melted butter, brown sugar vanilla and salt in a mixing bowl, until sugar dissolve then gradually mix in powdered sugar.
3. Press the mixture into prepared dish and smooth the top with spatula or simply press it with your palms to flatten into about ½ inch thick layer.
4. Now, you can place it in the freezer until firm enough for cutting.
5. Line a tray with parchment paper when the mixture is firm enough; set aside.
6. Cut out the trees with Christmas tree cookie cutter and place them on the tray, then place them in the freezer until completely firm, about 45 to 60 minutes.
7. Once done, melt the chocolate and line another tray with parchment paper.
8. Dip each tree into melted chocolate.
Using a fork to cover completely, then gently tap the fork to drip of the excess of chocolate. (I always take just a few trees at a time from the freezer, since the peanut butter mixture softens really fast at the room temperature. It’s easier to work with the firm trees
9. On the parchment paper lined tray, place chocolate covered Christmas trees and refrigerate until chocolate has set.
10. Finally, make sure to store in the fridge or freeze for longer storage.
Recipe Notes :
The number of trees depends on the size of your cookie cutter. You don’t have to waste any batter, just pick up leftovers, kneed, press with your palms and you will be able to cut out at least 2-3 more trees.
Keep in fridge until ready to eat!
