Optional: crushed garlic, chili flakes
Instructions:
Layer the chops, onion, and tomato in a slow cooker. (Tip: Browning the chops beforehand adds an extra layer of flavor.)
In a bowl, mix the tomato sauce, Worcestershire sauce, brown vinegar, beef stock, and brown sugar. Add garlic and chili flakes if desired.
Pour the sauce over the layers in the slow cooker.
Cook on high for about 3 hours, or until the chops are tender. (Cooking times may vary based on your slow cooker.)
About 30 minutes before serving, thicken the sauce with a cornstarch slurry (mix cornstarch with cold water) and stir into the slow cooker, continuing to cook until the sauce thickens.
Serve these heartfelt casserole chops hot, and let the rich, savory flavors take you on a nostalgic journey back to the joys of childhood.
