Lemon Blueberry Loaf Recipe: A Delightful Treat for Any Occasion

Ingredients
1/3 cup melted butter

1 cup sugar
3 tablespoons of lemon juice
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
2 tablespoons of grated lemon peel
1/2 cup chopped walnuts (optional)
1 cup of fresh or frozen blueberries
Glaze:
2 tablespoons of lemon juice
1 tablespoon melted butter
1 cup confectioner’s sugar
Step-by-Step Instructions

Preheat your oven to 350°F (175°C). Grease a loaf pan generously to prevent sticking.

In a mixing bowl, combine the melted butter and sugar until well blended.
Add the lemon juice and eggs to the mixture, whisking until smooth and creamy.
In a separate bowl, sift together the flour, baking powder, and salt to ensure even distribution of leavening agents.
Gradually add the dry ingredients to the wet mixture, alternating with the milk, and stirring until just combined. Be careful not to overmix, as this can result in a dense loaf.
Gently fold in the grated lemon peel, chopped walnuts (if using), and blueberries until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan, spreading it out evenly with a spatula.
Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly cracked.
While the loaf is baking, prepare the glaze by whisking together the lemon juice, melted butter, and confectioner’s sugar until smooth and creamy.
