Provençal-style aubergine pan.
In a pan, heat the olive oil over medium heat.
Add the onion and garlic, and sauté until golden.
Add the aubergine and red pepper cubes to the pan. Sauté for 5-7 minutes until the vegetables begin to soften.
Add the diced tomatoes and herbes de Provence. Season with salt and pepper to taste.
Reduce the heat and simmer for 15 to 20 minutes, stirring occasionally, until the vegetables are soft and well cooked.
If necessary, adjust the seasoning and serve hot as a side dish.
