Ritz Cracker Salted Caramel Icebox Cake

Ingredients:
– 2 cups heavy whipping cream
– 1/2 cup powdered sugar
– 1 teaspoon vanilla extract
– 1 cup salted caramel sauce (store-bought or homemade)
– 1 box Ritz crackers
– Sea salt flakes, for garnish
Instructions:
1. In a mixing bowl, whip the heavy whipping cream until soft peaks form.
2. Add the powdered sugar and vanilla extract to the whipped cream and continue to whip until stiff peaks form. Set aside.
3. In a separate bowl, gently fold 1/2 cup of the salted caramel sauce into the whipped cream until well combined.
4. Take a rectangular or square dish and begin assembling the icebox cake.
5. Spread a thin layer of the caramel whipped cream on the bottom of the dish to create a base.
6. Arrange a layer of Ritz crackers on top of the cream, breaking them if needed to fit.
7. Drizzle a bit of the remaining caramel sauce over the crackers.
8. Repeat the layers – cream, crackers, and caramel – until you’ve used up all the ingredients, finishing with a layer of the caramel whipped cream on top.
