Slow Cooker Garlic Parmesan Whole Cabbage with Lemon Butter

Directions:

  1. Prep the Cabbage:
Cut out the core of the cabbage while keeping the leaves intact. This will allow the flavors to seep into the cabbage.
  2. Make the Garlic Parmesan Butter:
In a small saucepan, melt the butter over low heat. Add minced garlic and cook for about 1-2 minutes until fragrant. Remove from heat and stir in the grated Parmesan, lemon zest, and lemon juice.
  3. Season the Cabbage:
Place the whole cabbage in your slow cooker. Pour the garlic-parmesan-lemon butter mixture evenly over the cabbage, ensuring to get some of the mixture between the leaves.
  4. Add Broth and Seasoning:
Sprinkle salt and black pepper over the cabbage. Pour the vegetable broth around the cabbage inside the slow cooker.
  5. Cook:
Cover the slow cooker and cook on low for 6–8 hours, or until the cabbage is tender and fully infused with the rich flavors.
  6. Serve:
Carefully transfer the cabbage to a serving plate and garnish with freshly chopped parsley before serving.

Variations & Tips:

  • Add Smoky Flavor: Sprinkle a bit of smoked paprika on the cabbage before cooking for a deeper, smoky flavor.
  • For a Spicy Kick: A pinch of crushed red pepper flakes can add some heat.
  • Vegan Option: Substitute the butter with olive oil or plant-based butter, and replace Parmesan with nutritional yeast.
  • Extra Crunch: For a crunchy texture, sprinkle some toasted breadcrumbs on top of the cabbage just before serving.

This savory dish pairs beautifully with roasted potatoes, buttery mashed potatoes, or a light cucumber salad. Add a slice of crusty bread to soak up the lemon butter sauce for a heartier meal. Enjoy!
