Soft lemon cookies

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Mix the Dough:
Gradually add the dry ingredients to the wet ingredients, mixing until a soft and smooth cookie dough forms.
Chill the Dough:
Cover the bowl with plastic wrap and chill the cookie dough in the refrigerator for at least 1 hour. This helps the dough firm up and enhances the flavor.
Shape Cookies:
Scoop tablespoon-sized portions of the chilled dough and roll them into balls. Place the balls on the prepared baking sheets, leaving space between each.

Bake:
Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft. Do not overbake for a chewy texture.
Cool:
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Prepare the Glaze:

Whisk Glaze Ingredients:
In a small bowl, whisk together the powdered sugar, fresh lemon juice, and fresh lemon zest until smooth.
Glaze the Cookies:
Once the cookies are completely cooled, drizzle the glaze over the top of each cookie using a spoon or piping bag.
Let the Glaze Set:
Allow the glaze to set before serving or storing the cookies.
Serve and Enjoy:
Serve these soft lemon cookies with a refreshing burst of citrus flavor. Enjoy with a cup of tea or as a delightful dessert!
