Ingredients

For the Donuts:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/2 teaspoon salt
  • 3/4 cup warm milk (110°F/45°C)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • Vegetable oil, for frying

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

For the Strawberry Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons strawberry puree
  • 1 teaspoon lemon juice

For Garnish:

  • Fresh strawberries, sliced (optional)
  • Crushed graham crackers (optional)

Instructions

1. Prepare the Donut Dough:
In a large bowl, combine the flour, granulated sugar, active dry yeast, and salt. Add the warm milk, melted butter, and eggs. Mix until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

2. Shape the Donuts:
Once the dough has risen, punch it down to release the air. Roll the dough out on a lightly floured surface to about 1/2-inch thickness. Use a donut cutter or two round cutters (one larger and one smaller) to cut out donut shapes. Place the cut donuts on a baking sheet lined with parchment paper, cover with a damp cloth, and let them rise for another 30-45 minutes, or until puffy.
