What an amazing shot! I cooked this for dinner and we had it again the following day.

Number of portions: 4
Ingredients: – 3 pounds of chicken thighs with bones and skin – 1 cup of pineapple juice
– 1/2 cup of soy sauce
– 1/2 cup of packed brown sugar
– 1/3 cup of ketchup
– 1/4 cup of chicken broth – 2 tablespoons of freshly grated ginger
– 2 cloves of garlic, finely chopped
– 2 teaspoons of sesame oil – 1 tablespoon of cornstarch – 1 tablespoon of water
– Fresh pineapple pieces, for decoration (if desired)
– Green onions, cut into small pieces to add on top (if desired)
– Sesame seeds, to sprinkle on top (if desired)
Instructions:
1. Heat your oven to 375°F (190°C) and place the chicken thighs in a big baking dish in one layer.
In a pot, mix pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, grated ginger, minced garlic, and sesame oil. Heat over medium heat. Heat the mixture until it starts to boil gently.
Cook the sauce over low heat for 10 minutes, stirring from time to time, until it becomes slightly thicker.
In a little bowl, mix the cornstarch and water. Add this mixture to the sauce that is gently boiling, stirring continuously until the sauce becomes thick enough to stick to the back of a spoon.
5. Put the sauce on top of the chicken thighs, making sure they are completely covered.
6. Cook in the oven that has been heated beforehand for 45 minutes to one hour, until the chicken reaches a temperature of 165°F (74°C) inside and the sauce is bubbling and caramelized. Put sauce on the chicken while it’s cooking to add more flavor.
Take it out of the oven and allow it to sit for a bit before serving.
Add pineapple slices, chopped green onions, and sesame seeds on top before serving.

Different options and advice: – If you want a healthier option, you can use chicken breasts or thighs without bones and skin; just make sure to change the cooking time as they might cook quicker.
