Luscious Dulce de Leche Cheesecake with a Gingersnap Crust

INGREDIENTS

For the crust:

• 2 cups gingersnap cookie crumbs

• 1/4 cup unsalted butter, melted

For the filling:

• 4 packages (8 oz each) cream cheese, softened

• 1 cup granulated sugar

• 4 large eggs

• 1 cup dulce de leche

• 2 teaspoons vanilla extract

For the topping:

• 1 cup dulce de leche
