Boston Cream Cupcakes

3 tbsp sugar

1 tbsp cornstarch

1 tsp vanilla extract

For the Chocolate Ganache:

1/2 cup heavy cream

6 oz semi-sweet chocolate chips

Directions:

Cupcakes: Preheat oven to 350°F. Mix flour, sugar, baking soda, and baking powder. Add butter, egg whites, vanilla, sour cream, and milk until smooth. Fill cupcake liners and bake for 18-20 minutes. Cool.

Filling: Heat cream to a simmer. Whisk egg yolks, sugar, and cornstarch. Gradually add hot cream, return to heat, and thicken. Stir in vanilla. Cool and fill cupcakes.

Ganache: Heat cream to a simmer, pour over chocolate chips. Stir until smooth. Dip cooled cupcakes to coat tops.
