BUTTER AND JAM COOKIES RECIPE

Preparation: Preheat your oven to 180°C (350°F) and prepare a baking sheet with parchment paper or a silicone mat. In a large bowl, beat the butter and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract, and continue beating until well combined. Add the flour and salt, and mix until a soft, homogeneous dough is formed. Shape the dough into walnut-sized balls and place them on the prepared baking sheet, leaving plenty of space between each one. Make a small hole in the center of each cookie with your finger or the handle of a wooden spoon. Fill each hole with a small amount of jam of your choice. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Once baked, remove the cookies from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely. And that’s it! Enjoy your delicious shortbread and jam cookies with a cup of tea or coffee for a real sweet treat.
