Cheese Potato & Smoked Sausage Casserole

Ingredients:
3 cups potatoes, peeled, boiled, and diced once cooled
4 tsp butter
4 tsp flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
500 grams of Velveta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage
1/8 tsp paprika
Directions:
Sausage Preparation: Cut the skinless smoked sausage lengthwise, then into ½ inch half-moon slices. In a cast-iron skillet, brown the sausage pieces for approximately 15 minutes, stirring often.
Potato Mixture: In a 2-quart saucepan, combine the cooled, diced potatoes and the browned sausage. Stir gently.
Cheese Sauce: In a separate saucepan, melt the butter over medium heat. Stir in the flour until smooth. Gradually add the milk, salt, and pepper, stirring constantly until thickened. Add the cubed Velveta cheese and continue to stir until the cheese is melted and the sauce is smooth.
Assembly: Pour the creamy cheese sauce over the potato and sausage mixture, ensuring everything is well-coated.
Final Touches: Transfer the mixture to a baking dish. Sprinkle the shredded cheddar cheese evenly over the top, followed by a dusting of paprika for color.
Baking: Place the casserole in a preheated oven at 350°F. Bake for 35-45 minutes or until the top is golden brown and the casserole is bubbly.
