Citrus Burst Blueberry Loaf

Ingredients:

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup granulated sugar

Zest of 1 large lemon

3/4 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1/2 cup milk

1 tablespoon lemon juice

1 cup fresh blueberries

Instructions:
Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, combine the sugar and lemon zest, rubbing them together with your fingers until the sugar is moist and fragrant.

Add the butter to the sugar mixture and beat until light and fluffy.
