Coconut Panna Cotta

Instructions:
In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to soften.

In a saucepan, combine the coconut milk, heavy cream, and granulated sugar. Heat over medium-low heat, stirring occasionally, until the mixture is hot but not boiling and the sugar has dissolved (about 5-7 minutes).

Remove the saucepan from the heat and stir in the softened gelatin mixture until completely dissolved.

Stir in the vanilla extract.

Divide the mixture evenly among serving glasses or ramekins.

Allow the panna cotta to cool to room temperature, then cover each glass or ramekin with plastic wrap and refrigerate for at least 4 hours, or until set.

Before serving, garnish with shredded coconut or fresh berries if desired.
