HOMEMADE TURTLE CANDY WITH PECANS AND CARAMEL

Melt the caramels with the heavy cream or milk. You can do this in a microwave-safe bowl, heating in 30-second intervals and stirring in between, or over a double boiler on the stove, stirring constantly until smooth.
Spoon the melted caramel over each pecan cluster, just enough to cover the pecans. Allow the caramel to set slightly, which can take about 5-10 minutes in the refrigerator.
Add the Chocolate:
Melt the chocolate using the same method as the caramels. Be careful not to overheat, as chocolate can seize. If using a microwave, short bursts of 20-30 seconds with stirring in between works well.
Spoon the melted chocolate over the caramel layer, ensuring it covers the caramel adequately. You can be as neat or as rustic as you like.
Optional: Sprinkle a tiny pinch of sea salt on top of each candy while the chocolate is still melted.
Finalizing:
Let the turtle candies set until the chocolate is firm. You can speed up this process by placing them in the refrigerator for about 15-20 minutes.
Serve once the chocolate has hardened, or store in an airtight container. These candies can be kept at room temperature if it’s not too warm, otherwise, they might need to be refrigerated.
