KEY LIME SHORTBREAD BARS

Ingredients:

For the Shortbread Base:

1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar
2 cups all-purpose flour
1/4 teaspoon salt
Zest of 1 lime
For the Key Lime Filling:

1 cup granulated sugar
4 large eggs
2/3 cup fresh key lime juice (you can also use regular lime juice)
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
Powdered sugar for dusting (optional)
Lime slices for garnish (optional)
Return the baking pan to the oven and bake for an additional 20-25 minutes, or until the edges are set, and the center is just slightly jiggly.
