Very easy to prepare strawberry mousse cake

10g water
6g powdered gelatin
garnish and decoration:
12/13 small and regular strawberries for decoration on the edge
200 g strawberries, cut into small cubes for internal garnish
2 strawberries for decoration
Preparation :
Preheat the oven to 180°C.
In a bowl, whisk the eggs and sugar until the mixture whitens and doubles in volume.
Add the sifted flour and the pinch of salt, mixing gently.
Pour the batter into a buttered and floured cake pan.
Bake for 20 to 25 minutes.
Meanwhile, prepare the strawberry mousse. Mix the strawberries with the sugar and water, then heat the puree obtained in a saucepan.
Add the gelatin powder and mix well.
Leave the preparation to cool.
Whip the crème fraîche into whipped cream.
Gently fold the cooled strawberry purée into the whipped cream.
Prepare the strawberry jelly by blending the strawberries with the sugar and water, then adding the powdered gelatin.
Cut the cooled sponge cake in half.
