Lemon Meringue Muffins with Thermomix

Here is the recipe for lemon meringue muffins with the Thermomix, delicious soft and slightly tangy muffins, and a very soft and golden meringue, an easy recipe to make with the Thermomix and ideal to serve as a dessert or for a snack.
Ingredients:
For the lemon muffins:
190 g flour
zest and juice of 1 lemon
200 g caster sugar
3 eggs
10 cl full cream
1 pinch of salt
3 g baking powder
70 g melted butter
For the meringue:
3 egg whites
200 g sugar
Preparation

lemon meringue muffins with the Thermomix:
Preheat the oven to 160°C.
Put the lemon zest and sugar in the bowl of the thermomix then mix for 15 seconds at speed 10.
Add the eggs and set for 1 minute at speed 3.
Then add the cream, butter, lemon juice, flour , salt, baking powder then mix for 40 seconds at speed 5.
Pour the preparation into muffin molds then bake for 20 minutes.
Then remove the lemon muffins, check the cooking and let cool.
