Lemon Cookies: Tasty and Easy to Prepare!

Soft, lemon-scented cookies are perfect for breakfast or a snack. With their delicate flavour and melt-in-your-mouth texture, they’re easy to make and a crowd-pleaser.

Ingredients
2 eggs
60 g (½ cup) sugar
50 mL (3 tbsp.) lemon juice
30 mL (2 tablespoons) vegetable oil
½ lemon (zest)
1 teaspoon (5 g) baking powder
210 g (1 ⅔ cup) all-purpose flour
50 g (¼ cup) cornstarch
120 ml (½ cup) milk
Sugar for sprinkling
Preparation
Whisk the eggs with the sugar, lemon zest, vegetable oil and lemon juice.
Mix flour, cornstarch and baking powder separately.
Add the dry ingredients to the egg mixture and mix to combine.
Set the dough aside in the refrigerator for 30 minutes.
